Why macarons work for almost any occasion
A French macaron is a small sandwich of two almond meringue shells with a filling in between. The shells are crisp on the outside and tender inside, and the filling is where most of the flavor lives. Ours are filled with ganache, buttercream or jam, depending on the flavor you choose.
That simple structure makes macarons unusually flexible. A box of six is a thoughtful gift. A platter of forty becomes the centerpiece of a dessert table. Two in a small bag, tied with ribbon, is a wedding favor that guests actually eat rather than leave behind on the table.
We bake French Macarons to order in our McKinney, Texas kitchen, the same way we bake every cake. You choose the flavor mix, we confirm the date by email or phone, and the box is ready for free pickup at the bakery or chilled delivery in McKinney.
What goes into a good macaron
The shell is made from almond flour, egg whites and sugar, folded together until the batter flows just enough to settle smooth. When it bakes properly, a thin crust forms on top and a ruffled "foot" rises at the base. That foot is the sign most people look for, and it is the part that gives a macaron its light bite.
The filling does two jobs. It carries the flavor, and it slowly softens the shell from the inside. This is why macarons are better on the second day than on the first, and one reason the lead time matters: the box you pick up should be ready to eat, not still settling.
Each type of filling behaves a little differently:
- Ganache is chocolate and cream, dense and rich. It suits dark chocolate, coffee and salted caramel flavors and holds up well on a table.
- Buttercream is lighter and takes fruit, vanilla and nut flavors well. It gives the softest bite.
- Jam is the brightest of the three, with a clear fruit taste. It is often paired with a thin ring of buttercream so the shell does not soak through.
One honest note on allergens. Macarons are built on almond flour, so they are not a nut-free dessert and cannot be made into one. Our kitchen also handles gluten, dairy and eggs, so traces cannot be fully excluded in anything we bake. If you need a nut-free gift, most of our cakes can be made nut-free on request, and we are glad to suggest one.
Macarons as a gift
A gift box of macarons says that someone chose carefully. The colors are part of the pleasure, the box opens like a small event, and nobody has to find a plate or a knife. That is why macarons travel well as a birthday gift, a thank-you for a teacher or a neighbor, a hostess gift for a dinner you have been invited to, or a small welcome for guests staying with you.
When you order, tell us who the box is for and what they like. A mix of six or twelve flavors is the usual choice, but a single-flavor box makes sense when you know the recipient loves one thing. Choose your flavor mix on the product page or leave it to us and mention any preferences in the notes.
If you want to build a larger gift, Canelés de Bordeaux sit naturally beside macarons. They have a dark caramelized crust and a soft vanilla-rum custard inside, and the contrast between the two pastries makes a small box feel complete. Ask us about alcohol-free options when you order if that matters for the recipient.
Macarons as wedding favors
Favors are the part of a wedding that couples most often leave until the last month, and macarons solve the problem neatly. Two of them fit in a clear bag or a small box, the shell colors can follow your palette, and they look finished with nothing more than a ribbon or a printed tag.
Start with the guest count and decide whether the favor sits at each place setting or waits on a table near the exit. Two per guest is the usual favor. If you would also like macarons on the dessert table, add roughly one more per guest so the display does not empty in the first ten minutes.
Favors usually travel with the wedding cake. Our team delivers and sets up wedding cakes on site, and favors can arrive in the same chilled delivery. Wedding orders are confirmed with a small deposit, which holds the date on our calendar. Our wedding cake planning guide walks through the rest of the timeline, from tasting to setup.
Colors and flavors are easier to coordinate than most couples expect. A tall White Strawberry Cake pairs well with pale pink and vanilla shells. A Wedding Berry Cheesecake with raspberries and blueberries looks at home next to raspberry and blueberry macarons in matching tones. Send us a photo of your palette and we will propose a mix before you confirm.
Macarons on the party table
At a birthday, a baby shower or a graduation, macarons do the job of a second dessert without the work of a second cake. Stack them on a tiered stand beside the cake, or scatter them on a long board with fruit and small pastries. Because they are already portioned, guests can take one while they wait for the cake to be cut.
Plan the quantity around the cake. If the cake is the main dessert, one to two macarons per guest is comfortable. If the macarons are the main event, count three per guest and choose at least four flavors so the platter has variety. Our cake serving size guide helps you size the cake itself, and the two numbers together tell you what the table needs.
Matching colors makes the table look planned rather than assembled. A modern entremet like the Pink Velour Mousse Cake, with its suede-like finish, works beautifully with a spread of shells in the same soft pink and cream. For a children's party, brighter shells beside a rainbow or candy cake carry the same energy.
Choosing flavors and quantities
Here is the planning table we use when customers ask "how many":
| Occasion | Format | Comfortable amount | When to order |
|---|---|---|---|
| Small gift | Box of 6 or 12 | One box | 3 to 5 days ahead |
| Larger gift with canelés | Mixed box | 12 macarons plus canelés | 3 to 5 days ahead |
| Party table with a cake | Platter | 1 to 2 per guest | 3 to 5 days ahead |
| Macarons as main dessert | Platter or stand | 3 per guest, 4 or more flavors | 5 days ahead if possible |
| Wedding favors | Bags or small boxes of 2 | 2 per guest, plus 1 per guest for the table | 2 to 3 weeks ahead |
A few habits make choosing flavors easier. Mix textures across the box, so a ganache flavor, a buttercream flavor and a jam flavor all appear. Include one classic that everyone recognizes, such as vanilla or chocolate, and one that is more unusual. For a gift, lean toward the recipient. For a table, lean toward variety.
Think about the season as well. In the warm months, fruit and jam fillings taste fresher and look brighter on a table. Around the holidays, chocolate, caramel and coffee ganache flavors feel more at home beside spiced desserts. If you are ordering for a group with children, keep at least one plain vanilla or chocolate option in the mix, since younger guests tend to reach for the familiar first.
When in doubt, tell us the occasion and the number of guests and let us propose a mix. It is easier to adjust a suggestion than to build a list from nothing, and you can still swap any flavor before you confirm.
Ordering, timing and keeping them fresh
Every order at our bakery is baked to order, and macarons are no exception. The order form on our website needs a date at least two days out, and we ask for the standard three to five days so the shells can rest properly. Wedding favors in larger quantities deserve the same two to three weeks we ask for wedding cakes. If you need something for tomorrow, call us. It is sometimes possible, and we will tell you honestly.
Pickup at the bakery is free. Chilled delivery is available in McKinney, and delivery with on-site setup for weddings and events is quoted individually. If your macarons are part of a custom order with a cake, tell us on the custom order form and we will propose design, flavors and price before you confirm anything.
Storage follows the same rule as our cakes. Keep the box refrigerated at 36 to 43 °F, take it out about 30 minutes before serving so the filling softens, and enjoy within 48 hours. In a Texas summer, transport matters as much as storage: lay the box flat on the car floor or in the trunk with the air conditioning running, never on a seat. Our guide to storing and transporting a cake in the Texas heat applies to macarons too. If you are unsure whether the timing of your event fits, our article on how far in advance to order explains how we schedule the week.
